Summer is finally here! We get to spend more time with our families while the sun kisses our skin with its warm rays, and we acquire that summer glow that we long for throughout the year. Our schedules are filled with pool parties, picnics, street festivals and walks on the beach… but precious little time for cooking, right? The best solution is to make quick, wholesome and fresh meals at home. My go-to meal for summer is a serving of these refreshing lettuce wraps made with pan-fried salmon, my favorite seasonal toppings and a zesty marinade that ties it all together. Bursting with flavor, these delicious ingredients can be customized to your liking, and if you’d like to add a spicy kick, throw in a few sliced jalapeños. Ready in under 20 minutes, these tasty lettuce wraps will leave you satisfied with plenty of time to enjoy the summer day with your loved ones.

Ingredients

  • 2 tablespoons canola oil
  • 1 lb. salmon (approximately 2 large filets)
  • Garlic salt to taste
  • 1/3 cup teriyaki marinade, plus more for dipping
  • 1 head butter lettuce
  • 2 cups coleslaw mixture (shredded carrots, cabbage and purple cabbage)
  • 3/4 cup white corn kernels, roasted or boiled on the cob
  • 2 cups quick cooked chow mein crispy noodles

Directions

    In a large skillet, heat oil over low-medium heat. Carefully place the salmon filets, sprinkle with garlic salt and cook approximately 4 minutes on each side.

    Add teriyaki sauce to your filets and let them cook for 1 minute more. Remove from heat and set aside.

    Wash and rinse lettuce. Carefully remove the leaves and place them in a paper towel to drain.

    Slice the cooked salmon into bite-sized pieces.

    To assemble: Place a lettuce leaf on the palm of your hand and top with 2-3 bite-sized pieces of salmon. Add the coleslaw mix, corn kernels and chow mein noodles. Serve with a side of teriyaki marinade sauce for dipping.
