I try to keep myself in check, I like to eat healthy and keep my family on a balanced diet. I always vary my weekly menu so we don't get bored. Once in a while I surprise them with tasty desserts that everyone loves. Why not give ourselves a day to indulge our cravings? As they say, cravings are our body telling us what it needs. At home, we love chocolate. Some of us prefer white, my eldest daughter likes milk chocolate and my husband likes dark. However, since my youngest daughter is the baby of the house, she get's to decide this time and we’re going to prepare a few delicious woopie pies with semisweet chocolate. If you don't know what woopie pies are, well they're delicious, fluffy, tasty treats made with marshmallow sandwiched between two pieces of chocolate cake. Sounds great, right? Don't feel guilty for indulging in this chocolaty dessert, once in a while isn't bad!

Ingredients

  • 1 1/4 cup granulated sugar
  • 1 stick butter (8 tablespoons)
  • 3 eggs
  • 1 teaspoon vanilla
  • 6 oz semisweet chocolate, melted
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup of chocolate powder (cocoa powder)
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 10 marshmallows chopped in half or one half of mini marshmallows

Directions

    Set the oven to 375°F. Prepare a baking dish and line it with parchment or wax paper.

    Use a hand mixer to whip the sugar with the butter until it's creamy. Add the eggs one at a time followed by the vanilla and melted chocolate.

    Separately, combine the dry ingredients in a deep container. Add is to the creamy mixture little by little while whipping with the hand mixer until all the ingredients are well combined.

    Pour the mixture into a pastry sleeve and this way you can create small balls or whatever shape you like. Bake for 6 to 8 minutes, depending on how strong your oven is.

    Remove from the oven and let cool on a rack or on wax paper for a few minutes. Flip half of the cookies over and place half of one marshmallow on the flat surface of the cookies. Place them back on the tray and bake for 2 more minutes to melt the marshmallows a bit. Remove from the oven and cover with the rest of the cookie forming sandwiches.

    To give your woopie pies a little variety, you can fill them with your favorite jam, frosting or dulce de leche. You can even decorate them with confectionary candies.

    If you want, you can give them a touch of color by adding a few drops of food coloring to the mixture.

    Give them different shapes with the pastry sleeve like hearts, triangles, circles or anything else you can come up with, bake and enjoy!
