Ingredients

  • 1 package (4.7 oz) Betty Crocker™ country style Yukon Gold mashed potatoes
  • 2 1/2 cups milk
  • 2 eggs
  • 1 cup waffle mix
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 avocado, mashed
  • 4 oz brie cheese, sliced
  • 1 lb turkey breast, sliced
  • Cranberry sauce, to taste

Directions

    Preheat the oven to 400 °F.

    In a medium-sized container, combine the package of instant potatoes, 1 1/2 cups milk and eggs. Mix with a spatula.

    Add the waffle mix, baking soda, baking powder, salt and pepper, and 1/2 cup milk. Stir well.

    Preheat the waffle iron, pour 1/4 cup of the batter onto the griddle, distributing with a spatula if necessary. Close the waffle iron and cook until golden brown, for approximately 2-3 minutes each waffle. Repeat with remaining batter.

    Spread 1 tablespoon of mashed avocado over the top of 4 waffles, which will be used to create the bottom of this waffle sandwich. Layer with the cheese, turkey and cranberry sauce before closing the sandwich with a top waffle. (You can use a skewer or toothpick to keep the sandwich from falling apart) Bake for 5-10 minutes, until the cheese has melted.

    Remove from oven and serve immediately.

    Swap out turkey for chicken or any of your favorite cold cuts.

    Substitute the avocado for mayonnaise or prepare your own spread, combining 1 tablespoon of mayonnaise with the avocado and smashing with a fork until creamy.
