Vegetarian Chorizo Nachos

I really enjoy vegetarian food and frequently look to substitute meat ingredients for soy protein. I’ve found a buenisimo vegetarian chorizo, which is an excellent option when cooking your favorite chorizo recipe. Since nachos are one of my preferred snacks, I decided to create a dish incorporating a rico vegetarian chorizo with this classic finger-food. Ingredients

  • 4 cups corn tortilla chips or totopos
  • 1 cup cooked vegetarian chorizo, equivalent to two cups uncooked soy chorizo
  • 1/2 cup diced purple onion
  • 1 cup chopped tomato
  • 2 serrano chili peppers, finely diced
  • Juice from one whole lemon
  • 1/3 cup fresh cilantro
  • 1/2 cup chopped avocado
  • 1 cup back beans or frijoles
  • 1 cup queso fresco, crumbled
  • Salt to taste

Directions

    First place the vegetarian chorizo in a skillet and cook with a bit of vegetable oil for 20 minutes or until golden. Set aside.

    Next chop and prepare the vegetables from the recipe list, creating a Mexican salsa by combining the onion, tomato, serrano chili peppers and lemon juice. Mix well and season with salt as desired.

    To assemble the nachos, place a bed of corn chips or totopos over a large serving dish and fill with a bit of cooked chorizo, prepared salsa, some fresh cilantro, chopped avocado and black beans. Last, sprinkle the chips with a bit of crumbled queso fresco and serve immediately.

    You can use a Mexican-style pork chorizo in place of the vegetarian variety if you like.
