Expert Tips

Take advantage of the frozen vegetables to complete your dishes. This will save your time.

You should also keep an eye out for the when the supermarkets reduce the prices on vegetable broth, this will save you money and time when you prepare your soups.

Directions

  • 1 Heat the oil in a medium pot. Fry the onion and garlic until they are tender. Add the turnips, carrots, the bag of greens, the vegetable broth, ham and bay leaves. Let boil. When it does, lower the temperature so that it continues to simmer softly.
  • 2 Cover the pan and let cook for 20 minutes making sure the turnips do not over cook.
  • 3 Serve immediately.

One of the most popular vegetables during this season is the turnip. I love seeing them in the produce area because of their beautiful white and purple colors. Turnips have a natural subtle spiciness that pairs wonderfully with sweeter veggies like carrots. The soup I’m sharing with you today is an explosion of color and flavor. It can be prepared in just 40 minutes and wonderfully compliments sandwiches for lunch. You can even serve it as a dinner appetizer. I added ham, but you can omit that ingredient to prepare a vegetarian soup.
