One of the most popular vegetables during this season is the turnip. I love seeing them in the produce area because of their beautiful white and purple colors. Turnips have a natural subtle spiciness that pairs wonderfully with sweeter veggies like carrots.
The soup I’m sharing with you today is an explosion of color and flavor. It can be prepared in just 40 minutes and wonderfully compliments sandwiches for lunch. You can even serve it as a dinner appetizer. I added ham, but you can omit that ingredient to prepare a vegetarian soup.
