Expert Tips

Plan ahead: make meatballs, place on baking sheet, cover with plastic wrap and store in fridge up to 1 day.

Football fans love a little spice in their game-day fare and these turkey meatballs have just enough spice to keep you rooting all game long. A sweet, spicy pineapple glaze bastes succulent turkey meatballs; double the recipe because these tiny bites are addictive!

If you don't want them so spicy, remove jalapeño seeds.

Directions

  • 1 For meatballs: Pre-heat oven to 350 °F. Spray a baking sheet with nonstick cooking spray; set aside.
  • 2 In a bowl combine all ingredients well. With wet hands, form small meatballs.
  • 3 Place on baking sheet and bake for 10 minutes, baste with spicy pineapple glaze and bake an additional 5 minutes.
  • 4 Remove from oven; baste with glaze again and serve warm.
  • 5 For spicy pineapple glaze: In a small sauce pan, whisk together all ingredients. Bring to a boil; boil for 5 minutes until sauce is slightly thick. Remove from heat and use to baste meatballs.
