Turkey Endive Wraps

Whenever ground turkey is on sale at the grocery store, I like to purchase a few trays to freeze and store for last minute dinner ideas. One of those dinner or lunch ideas I like to prepare every few weeks is wraps. Wraps can be prepared with pitas and flour tortillas, of course, but I like to cut calories and prepare a better-for-you version with either lettuce or endive spears. For this recipe I used endive spears because they are shaped like a scoop and are the perfect vessel for a mess-free, low calorie dinner, lunch and even a snack.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 lb ground turkey
  • 1/2 cup onion, chopped
  • 1 carrot, peeled and finely diced
  • 1 Roma tomato, finely diced
  • 1 tablespoon cilantro, finely chopped
  • 1/4 teaspoon chicken bouillon
  • 1/4 teaspoon fresh cracked pepper
  • 12 endive spears, rinsed

Directions

    In a large skillet, heat oil over low-medium heat. Add turkey and cook, breaking meat apart with spatula; about 2 minutes.

    Add onion and carrot and stir until onion begins to soften. Stir in tomato, cilantro and season with chicken bouillon and pepper. Continue cooking for 7 more minutes or until turkey has browned and is thoroughly cooked. Remove from heat and let cool.

    Spoon turkey mixture on top of each endive spear and serve.
