Directions

  • 1 In a large skillet, heat oil over low-medium heat. Add turkey and cook, breaking meat apart with spatula; about 2 minutes.
  • 2 Add onion and carrot and stir until onion begins to soften. Stir in tomato, cilantro and season with chicken bouillon and pepper. Continue cooking for 7 more minutes or until turkey has browned and is thoroughly cooked. Remove from heat and let cool.
  • 3 Spoon turkey mixture on top of each endive spear and serve.

For this recipe I used endive spears because they are shaped like a scoop and are the perfect vessel for a mess-free, low calorie dinner, lunch and even a snack.
