Turkey Cranberry Yogurt Dip

Directions

  • 1 Heat up the oil in a large pan over medium-high heat. Add half the onion and garlic, and cook until golden brown. Add the tomato paste, ground chili, 1/2 teaspoon salt, and the cayenne pepper. Cook and stir for about 2 minutes until the mixture is a dark red.
  • 2 Add the chicken broth and boil it over low heat. Cook until it thickens a bit, for about 3 minutes. Add the turkey and stir. Let it cool down.
  • 3 In a small bowl, mix the sour cream, cilantro, lemon juice and lemon zest. In another bowl, mix the corn and green pepper.
  • 4 In a large baking dish layer the corn bread.
  • 5 Then, put a layer of tomatoes, a layer of beans, cheese, sour cream, cranberries, turkey, and the rest of the chopped onions.
  • 6 Lastly, add the corn and green pepper.
  • 7 Leave aside for a few minutes and serve with tortilla chips.
