To prepare the cranberry sauce:

  • 1 To prepare the cranberry sauce: Put the cranberries, orange juice and sugar in a medium-sized pot and bring to a boil over medium heat. Reduce to low heat and cook until the cranberries burst and the sauce begins to thicken, for about 10-15 minutes.
  • 2 To prepare the quesadillas: Heat a frying pan over medium heat.
  • 3 Set a tortilla on your work surface and cover with the cheese, turkey, cranberry sauce and sage, and cover with another tortilla.
  • 4 Cook the quesadilla until golden brown and the cheese has melted, about 2-4 minutes each side.
  • 5 Serve and enjoy!
