Turkey Chorizo Quiche

A quiche can be the perfect complete meal. It has eggs, milk or heavy cream, vegetables, ham or some other protein (in this case chorizo). The only side that it needs is perhaps a small salad and maybe a piece of bread. The best thing about quiche is that its preparation doesn’t take too much time. Ingredients

  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • 1 tablespoon vegetable oil
  • 1 cup leek, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 cup turkey chorizo, chopped
  • 1 cup broccoli, blanched and chopped
  • Salt and pepper, to taste
  • 4 eggs lightly beaten
  • 1 cup half & half cream
  • 1/4 teaspoon nutmeg, grated
  • 6 thin slices of Edam cheese
  • Basil, as garnish

Directions

    Preheat oven to 350°F.

    Add the pie crust to the bottom of a pie dish. Press firmly into the sides and bake for 15 minutes. Remove from oven and cool on a rack while you prepare the filling.

    On a frying pan at medium heat, add oil and sauté leek and garlic. Once they’re lightly browned, transfer to a dish. In the same frying pan, sauté chorizo for 6 minutes. Turn off heat, combine chorizo with leek and garlic and let cool.

    Add broccoli and season with salt and pepper, to taste.

    Combine eggs, cream, nut meg and finally combine with vegetables and chorizo.

    Add a few layers of cheese over the baked pie crust. Pour the egg mixture over cheese.

    Bake for 40 minutes. The quiche should look lightly fluffy in the center, cooked and with a uniform golden color. Don’t overcook it.

    Garnish with basil leaves and serve warm.
