Turkey Casserole with Cheesy Hash Browns

After the busy holiday season, sometimes all you want to do is stay home, enjoy your family and eat leftovers. However, eating the same leftovers can get old. I would like to share with you an alternative to make the most of that delicious leftover turkey. It’s a delicious combination that’s perfect for breakfast or even dinner. Pair it with a salad and fruit, and you’ve got yourself a complete meal. Casseroles also give you the opportunity to add whatever vegetable you have on hand. This time I used hash brown potatoes that I had in my freezer, green onions and jalapeño pepper. I hope you like it.

Ingredients

  • 2 tablespoons olive oil
  • 4 green onions, finely chopped
  • 1 jalapeño pepper, finely chopped
  • 3 cups frozen hash browns
  • 10 oz cooked turkey meat
  • 4 eggs
  • 3/4 cup Bisquick™ Original pancake and baking mix
  • 2/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground back pepper
  • 8 oz cheddar cheese, grated

Directions

    Heat oil in a pot and sauté the green onions and jalapeño pepper. Add hash brown potatoes and cook for 3-4 minutes on each side. Add shredded turkey meat and let cook for 2-3 minutes.

    Beat the eggs and combine with Bisquick™, milk, salt, pepper and 2/3 of the cheddar cheese.

    Grease a rectangular or round baking dish. Add potatoes and turkey to the bottom of the baking dish. Cover with the egg and Bisquick™ mixture and top with the remaining cheddar cheese.

    Cover the casserole with aluminum foil and bake for 40 minutes. Remove foil and bake for 15 minutes or until a toothpick inserted in the middle of the dish comes out clean.

    Serve immediately.

    You can also make this dish, Italian style by adding mozzarella cheese and basil instead of jalapeño.
