Expert Tips

You can also make this dish, Italian style by adding mozzarella cheese and basil instead of jalapeño.

Directions

  • 1 Heat oil in a pot and sauté the green onions and jalapeño pepper. Add hash brown potatoes and cook for 3-4 minutes on each side. Add shredded turkey meat and let cook for 2-3 minutes.
  • 2 Beat the eggs and combine with Bisquick™, milk, salt, pepper and 2/3 of the cheddar cheese.
  • 3 Grease a rectangular or round baking dish. Add potatoes and turkey to the bottom of the baking dish. Cover with the egg and Bisquick™ mixture and top with the remaining cheddar cheese.
  • 4 Cover the casserole with aluminum foil and bake for 40 minutes. Remove foil and bake for 15 minutes or until a toothpick inserted in the middle of the dish comes out clean.
  • 5 Serve immediately.

After the busy holiday season, sometimes all you want to do is stay home, enjoy your family and eat leftovers. However, eating the same leftovers can get old. I would like to share with you an alternative to make the most of that delicious leftover turkey. It’s a delicious combination that’s perfect for breakfast or even dinner. Pair it with a salad and fruit, and you’ve got yourself a complete meal. Casseroles also give you the opportunity to add whatever vegetable you have on hand. This time I used hash brown potatoes that I had in my freezer, green onions and jalapeño pepper. I hope you like it.
