Tuna Stuffed Jalapeños with Tomatillo Salsa

When I organize a get-together with family or friends, I always like to have some appetizers and snacks ready to offer my guests before a meal. I don't like complicated preparations, so I usually opt for a recipe that's easy and reasonable in price. These tuna-stuffed jalapeños can be prepared quickly and are just the right fit for entertaining. Let's cook!

Ingredients

  • 12 jalapeños in vinegar (you can use the canned jalapeño peppers with carrots), 2 per person
  • 2 cans of tuna in water
  • 1 cup tomatillo sauce*
  • 1 tablespoon vinegar, from the canned jalapeños
  • 1 teaspoon olive oil
  • Salt and pepper, to taste

Directions

    Open the can of jalapeños in vinegar and remove the peppers. For each pepper, cut off the top (stem side) then remove the seeds and veins. When finished, set the cleaned peppers to the side.

    Next, open the tuna and drain off the water. In a bowl, break up the sections of tuna with a fork and dress with olive oil, the reserved vinegar (from the can of jalapeños), salt and pepper. Mix well and fill the jalapeños with the seasoned tuna.

    To serve, spoon a little tomatillo salsa onto a dish and place the filled jalapeño on top. Garnish with a few carrot pieces from the canned jalapeños. This is a picante appetizer, but the combination of sabores will create a sensational party for the palate.
