Directions

  • 1 Assembly: Layer the ingredients in a decorative manner in a mason jar. Start with the flour and baking powder for the bottom layer, add the brown sugar, followed by the nutmeg and dried coconut. Lastly, add the chopped, dried papaya.
  • 2 To make the muffins: Pour all ingredients into a mixing bowl and add 2 lightly whisked eggs, 1/4 cup oil and 2 cups milk. Mix until ingredients are well incorporated. Let sit 10 minutes to help rehydrate the papaya while the oven is preheating to 375°F.
  • 3 Pour mixture into well-oiled cupcake tins.
  • 4 Bake 18-20 minutes or until golden brown.
