Directions

  • 1 Preheat the oven to 350°F. Put muffin cups in a muffin pan. Spray the muffin cups with cooking spray and flour them.
  • 2 In a medium bowl, mix flour, baking powder, and salt. Let the mixture rest.
  • 3 In a large mixing bowl, beat butter at medium speed. Gradually add the sugar. Beat for 2 more minutes.
  • 4 Add the egg whites, one at a time. Keep beating. Add the rum extract.
  • 5 Reduce the mixer speed and gradually add in the flour mixture. Add the milk and keep beating. Add the pecans.
  • 6 Place approximately 3 tablespoons of the mixture into each muffin cup. Bake for 18 to 20 minutes, or until a toothpick inserted in the center of each muffin comes out clean.
  • 7 Let the muffins cool for 5 minutes before removing them from the pan. Once out of the pan, let rest for another 10 minutes.
  • 8 Using a fork, pierce the upper part of each muffin.
  • 9 In a small bowl, beat condensed milk and coconut milk until the mixture is smooth. Pour 2 teaspoons of the milk mixture on top of each muffin, allowing it to soak in through the holes. Refrigerate the muffins for 2 hours, until the mixture is absorbed.
  • 10 Rum Whipped Cream: In a medium bowl, beat the whipped cream and rum extract until you get the desired consistency.
  • 11 Top each muffin with approximately 2 tablespoons of whipped cream.
