Ingredients

  • 8 medium tomatoes, ripe but firm
  • 2 cups boneless chicken breast, roasted or grilled, diced small
  • 10 stuffed olives, finely sliced
  • 1 cup peas
  • 1/2 cup green pepper, diced small
  • 1/2 cup yellow pepper, diced small
  • 1 small carrot, diced small
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste

Directions

  • 1
    Wash the tomatoes. With a sharp knife, cut the top off each tomato and remove the heart and seeds with a teaspoon. Wash them again and drain them over paper towels.

    Put the chicken in a deep bowl and mix it with the rest of the ingredients. Add the mayo, mix well and season with salt and pepper.

    Stuff the tomatoes with chicken salad. Refrigerate until serving.
