Tilapia with Roasted Corn

There are some days I just don't feel like taking lots of time to make dinner and others when there just doesn't seem to be enough time. That's why I like to have a few different options in mind that can get me out of a rut on one of those days. This delicious dish is perfect when I need something quick and yummy. These tilapia fillets covered in a slightly tangy sauce and roasted corn call for just 5 ingredients. What comes out of the oven tastes great, is budget-friendly and easy to whip up in a pinch!

Ingredients

  • 1/4 cup mayonnaise
  • 1-2 teaspoons chile powder
  • 1/4 teaspoon salt
  • 4 tilapia fillets (or any other soft, white fish)
  • 1 1/2 cups corn

Directions

    Preheat the oven to the highest broiler setting.

    In a small container, mix the mayonnaise, chili powder and salt. Once combined, spread a thin layer of this spread in the bottom of a baking dish. Be sure the dish is big enough for all 4 fillets.

    Arrange the fish in the dish and uniformly spread the remaining mayonnaise sauce over the fillets. Cover the fillets with the corn.

    Bake until the corn is slightly roasted and the fish thoroughly cooked, for approximately 10 minutes. Serve immediately.
