Expert Tips

Garnish with lemon wedges and chopped parsley for an extra kick of flavor.

Directions

  • 1 Preheat the oven to the highest broiler setting.
  • 2 In a small container, mix the mayonnaise, chili powder and salt. Once combined, spread a thin layer of this spread in the bottom of a baking dish. Be sure the dish is big enough for all 4 fillets.
  • 3 Arrange the fish in the dish and uniformly spread the remaining mayonnaise sauce over the fillets. Cover the fillets with the corn.
  • 4 Bake until the corn is slightly roasted and the fish thoroughly cooked, for approximately 10 minutes. Serve immediately.

There are some days I just don't feel like taking lots of time to make dinner and others when there just doesn't seem to be enough time. That's why I like to have a few different options in mind that can get me out of a rut on one of those days. This delicious dish is perfect when I need something quick and yummy. These tilapia fillets covered in a slightly tangy sauce and roasted corn call for just 5 ingredients. What comes out of the oven tastes great, is budget-friendly and easy to whip up in a pinch!
