I love to enjoy brunch with my mom on Sundays. It’s a great time to catch up on family news and spend time with her over a hearty meal. When I host brunch in my kitchen, I love to make a thin strawberry and kiwi tart to savor over a hot cup of dark coffee. This dessert is easy and ready in less than 20 minutes. Perfect for those unexpected brunch guests with a sweet tooth. This quick treat can be stuffed with your favorite fruit. I selected to share with you my strawberry and kiwi fruit version.

Ingredients

  • Flour for dusting
  • 1 refrigerated pie crust dough, at room temperature
  • 1/3 cup vanilla cookies, crushed (wafer-style)
  • 1 cup strawberries, sliced in rounds
  • 2 kiwi, peeled and sliced in rounds
  • 1 egg, beaten
  • 1/4 cup honey
  • 1/2 tablespoon brown sugar
  • 1/2 teaspoon cinnamon, ground

Directions

    Preheat oven to 400°F.
  • 2
    On a floured surface, roll out piecrust dough.
  • 3
    Place dough-round on a large greased cookie sheet.
  • 4
    Top with crushed cookies in the center of dough, leaving a 1 1/2 inch border.

    Arrange strawberry and kiwi rounds in circle formation, leaving the 1 1/2 inch border and starting from the outside of the circle in, until reaching the center of the tart. Carefully fold the border inward leaving the center of the tart exposed.

    Brush dough border with egg.

    Bake for 15 minutes or until golden.

    Remove from oven and immediately drizzle with honey; sprinkle with brown sugar and cinnamon.

    If you have any strawberry or kiwi fruit rounds left over, tuck them in the center of the tart prior to serving.
