Directions

  • 1 Place the olive oil and diced carrots in a large saucepan over medium heat. Cook for about 5 minutes or until the carrots are soft.
  • 2 Add the tomato puree, Italian seasoning and chicken stock. Simmer, uncovered for about 15 minutes.
  • 3 Meanwhile, cook the pasta in boiling water according to packaging instructions. Drain and set aside.
  • 4 Add pasta to soup and mix to combine. Add cheeses and stir well to mix everything together, turn off heat.
  • 5 Ladle heated soup inside a pre-heated thermos container.
