From time to time, my vegetarian friend comes over for dinner. Usually, we have a lot of fun in the kitchen and cook new recipes together. This last time, I asked her what she preferred to eat, and she suggested that we make Thai Tacos. Thai Vegetable Tacos? I was intrigued. In my opinion, tacos are one of the best dishes. The possibilities are endless and nearly anything tastes amazing inside a crispy shell! While the ingredient list might seem a bit long, don’t worry. It’s well worth making your own Thai sauce instead of purchasing that peanut Thai sauce at the store. The crispy vegetables and the soft texture of the tofu make it a delicious recipe we will try again!

Ingredients

  • 1 package firm tofu
  • 2 teaspoons canola oil
  • Big pinch of salt
  • 1/3 cup creamy peanut butter
  • 1/4 cup water
  • 2 teaspoons garlic paste
  • 1/2 teaspoons dried ginger
  • 1 tablespoon low sodium soy sauce
  • Juice from 1/2 lime
  • 1/4 tablespoon sesame oil
  • 2 cups shredded cabbage (green or red)
  • 2 cups shredded carrot
  • 1/2 cup cilantro, coarsely chopped
  • 1/2 cup green onion, chopped
  • Juice from 1 lime
  • Few drops of sesame oil
  • Salt and pepper to taste
  • 8 small tortillas (warmed)
  • 8 lime wedges
  • Chopped peanuts for garnish (if desired)

Directions

    Begin by draining the tofu and placing it between some paper towels for about 15 minutes to pull out some of the moisture. Slice the tofu into 1/2 inch or 1 cm pieces.

    Meanwhile, whisk together in a bowl, peanut butter, water, garlic paste, ginger, soy sauce, lime juice and sesame oil. Add water if marinade sauce is too thick. This is the sauce for the tofu. Set aside.

    In a medium size bowl mix together carrots, cabbage cilantro and green onions. Add lime juice and a few drops of sesame oil. Add salt and pepper to taste. Lightly toss. This is the topping for the soft tacos. Set aside.

    Place a nonstick skillet on the stove and heat to medium high heat. Add canola oil. Add tofu and cook until it’s a light golden color. Add your vegetables and stir fry them for about 5minutes (you want them crispy). Add sauce to skillet. Cook for about a minute or two, or until sauce is heated through. You’ll notice that the sauce thickens up real quick. Remove from heat.

    Divide tofu and vegetable mixture between 8 to 10 warm tortillas or crispy taco shells. Drizzle with any leftover sauce, top with 1/2 teaspoon plain Greek yogurt (if desired) and serve with a lime wedge.
