I love pudding, perhaps because it reminds me of my childhood and the exquisite aroma coming from my mother’s oven. Today I have a very delicious recipe for pudding lovers. This is a special one, for those who like cassava. It’s a dessert made with cassava powder (also known as tapioca), milk, eggs and lots of grated coconut. This is the traditional dessert of the Brazilian city of Salvador de Bahía… Truly delicious!

Ingredients

Ingredients for the caramel:

  • 1 cup sugar
  • 1/2 cup water

Ingredients for the tapioca pudding:

  • 1 cup tapioca flour
  • 2 cups milk
  • 2 cups fresh grated coconut
  • 2 tablespoons butter
  • 1/2 cup sugar
  • 2 cups coconut milk
  • 1 can (14 oz) condensed milk
  • 6 eggs

Directions

    First, combine tapioca, milk and grated coconut, and let rest in refrigerator for 5 hours or overnight.

    Preheat the oven to 350°F with the water in shallow pan for the water bath.

    Prepare caramel by pouring sugar and the water into the pudding pan (7 inches) and heating over medium heat, constantly stirring, for about 5 minutes or until it turns a light brown color.

    Melt the butter and set aside.

    Carefully separate the egg whites from the yolks.

    Beat egg whites with electric mixer until stiff peaks form; set aside

    In deep bowl, beat coconut milk, condensed milk, butter, sugar and yolks by hand until you have a homogeneous cream. Add the tapioca mixture and blend together. Lastly, gently mix in with spatula egg whites, already beaten stiff.

    Pour the mixture into the pudding pan where you previously made the caramel.

    Cook in the water bath in oven for about 1 hour, 30 minutes or until it thickens.

    Remove from the oven and let cool.

Expert Tips

    When baked in a water bath, it is advisable to heat up the water prior to putting the can in - at least 15 minutes prior.
  • tip 2
    One way to know if the pudding is ready is by inserting a knife into it; if it comes out clean, it’s probably ready.
  • tip 3
    Once it’s cool, run a knife around the edges to easily remove it from the pan.
