tablespoon coconut or olive oil

small onion, finely chopped

garlic cloves, finely chopped

teaspoon ground pepper or cayenne pepper

(10.5 oz.) can black beans, rinsed and drained
1/2
cup cooked brown rice
4
large flour tortillas

Expert Tips

You can add corn, bell peppers or chopped avocado.

You can also use red beans instead of black beans.

Directions

  • 1 Rinse and drain the sweet potatoes, and dice into small pieces. Sauté the onion and garlic for 5 minutes over medium heat.
  • 2 Add the beans and sweet potatoes, and then mix.
  • 3 Lastly, add the rice.
  • 4 Warm up the flour tortillas and fill them up with two tablespoons full of the mixture.
  • 5 Fold the burritos and serve with guacamole or avocado.
