Directions

  • 1 For the chicken satay: In a medium bowl, combine fish sauce, lime juice, honey, soy sauce, chipotle chile, garlic and whisk until well mixed.
  • 2 Place chicken tenders in the bowl and marinate for 15 minutes. Heat grill pan or skillet on medium high. Pierce skewers through each chicken tender. Place chicken onto grill or pan and cook each side for approximately 3 minutes on each side or until well cooked.
  • 3 For the peanut sauce: In a small mixing bowl, combine peanut butter, coconut milk, fish sauce, lime juice, and honey. Whisk until well blended. Serve over chicken satay.
