Summer Spinach, Grape and Feta-Cheese Salad

Summer salads make the best use of seasonally fresh ingredients, and the possibilities are endless. Spinach is one of my favorite leafy greens when it comes to preparing a fresh and wholesome salad. Another go-to salad ingredient is cheese; especially feta cheese! This salad can be served as a side and paired with different kinds of meats and fishes. It's delicious alongside roasted chicken, grilled shrimp or loin. Try it this summer!

Ingredients

To prepare the vinaigrette:

  • 1/3 cup wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 1 teaspoon scallions (the white part)
  • 1/3 cup extra virgin olive oil
  • 1/3 cup vegetable oil

To prepare the salad:

  • 3 cups baby spinach
  • 1 cup flax seed sprouts (optional)
  • Salt and pepper, to taste
  • 2 cups seedless grapes, halved
  • 8 oz mushrooms, finely sliced
  • 4 oz feta cheese, crumbled
  • 2 tablespoons scallions, sliced (both the white and green part)

Directions

    To prepare the vinaigrette: In a blender, process the vinegar with the honey, mustard, salt, pepper and scallions. Add the oils and process until emulsified. Pour in a jug or serving jar and set aside to drizzle on salad before serving. Store in the refrigerator for up to 2 days.

    To prepare the salad: Add the spinach leaves and flax seed sprouts (optional) to a salad bowl. Season with salt and pepper.
  • 3
    Incorporate most of the grapes and mushrooms, reserving a few for garnish. Combine the feta cheese and scallions. Serve with the vinaigrette.

    To add even more color and texture to this salad, toss in 2 cups of different kinds of lettuce.
