Heirloom tomatoes are in season. The best compliment to an heirloom tomato is a big chunk of cheese and a tangy vinaigrette. Because those colorful little gems are very good for you, I decided to serve them as appetizers during our summer cookouts and get togethers. Panela cheese complements these tomatoes and a quick oregano vinaigrette will bring the flavor of this easy and fun appetizer all together.

Ingredients

  • 1 pint heirloom cherry tomatoes (about 45 count)
  • 10 oz panela cheese, cubed into 1/2-inch pieces
  • 4 tablespoons olive oil
  • 4 tablespoons vinegar
  • 1/4 teaspoon dried oregano crushed
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon fresh cracked pepper

Directions

  • 1
    Slice cherry tomatoes in half and scoop out the flesh with a melon baller.
  • 2
    Insert a piece of cheese in each tomato half and place in a serving platter.

    In a small bowl, combine oil, vinegar, oregano, salt and pepper. Whisk until combined. With a small spoon or pastry brush, dab vinaigrette on each stuffed cherry tomato before serving.
