In Peru we call this action "piqueo", and it's one of my favorite ways to eat! Who doesn’t like to nibble on a little bit of everything? The bigger the variety, the merrier. If you want to breeze through your next summer celebration, check this stuffed artichoke hearts out. This appetizer recipe is the easiest thing to make in the world, it calls for just a few ingredients, and it doesn't involve any cooking!

Directions

  • 1 Mix the hummus and chopped spinach in a cup.
  • 2 Place the artichoke hearts cut in half on a dish. Cover each half with about 1 teaspoon of the hummus and spinach spread.
  • 3 Slice the olives, and put one slice on top of each artichoke half.
  • 4 Cut the alfalfa sprouts in 1/2 -1 inch pieces, take about 4-6 pieces, and press them a little bit into the hummus, through the middle of each olive slice (see picture).
  • 5 Serve.
