Expert Tips

Use a cupcake or muffin pan to safely store the sorbet cups in the freezer.

What's not to love about a little cup filled with the refreshing flavors of lemon and strawberry? From wedding cakes to backyard gatherings, these simple sorbet cups make for the perfect cupcake replacement. Made from wholesome ingredients, this dessert is guilt-free. And since they're beautifully presented in a natural container, these lemon strawberry sorbet cups can be as fancy as you want them to be!

Directions

  • 1 In a pot on high heat, bring water and sugar to boil. Add lemon zest and let steep. Once you've created simple syrup, remove from heat.
  • 2 Purée cleaned and hulled strawberries with a blender. Once you've reached a thin consistency, add simple syrup and lemon juice. Check for desired sweetness level. Place in refrigerator to chill.
  • 3 Once chilled, pour mixture into ice cream maker. Follow manufacturer's instructions.
  • 4 While the sorbet churns, prepare the lemon cups by slicing a thin layer off the bottom of the lemon. This will help your lemon cups sit upright. Slice the other end of the lemon at approximately 1/4 from the top. With a spoon, remove pulp and seeds to create a hallowed lemon shell.
  • 5 Once the sorbet has reached the desired consistency, scoop into lemon cups. Place in freezer or serve immediately. Garnish with basil.
