Arroz con leche is a favorite treat at my house. By letting the rice cool and get a bit sticky, you can create some tasty rice bites with your favorite fruit and sweet topping. Perfect for a spring picnic or outdoor family get-together, these dessert bites are visually appealing just as they are delicious and welcomed at any outdoor party.

Directions

  • 1 Rinse rice in cold water.
  • 2 In a medium saucepan over low-medium heat, heat milk, rice, sugar, and vanilla pod. Stir and bring to a boil; lower heat to simmer. Cover and cook for 25 minutes. Stir frequently with wooden spoon. Rice will be very sticky. Discard vanilla pod.
  • 3 Line a baking sheet with parchment paper and spread rice on sheet, distributing it evenly. Let cool.
  • 4 Pick approximately 2 tablespoons of rice with hands, roll into a ball, and set on a serving plate.
  • 5 Garnish with banana slices, strawberry slices, mint leaves and cajeta.
