Star-Shaped Pasta Dry Soup

Star dry soup is one of the quick meals from my childhood. My mom would prepare it often saying that the star soup was to celebrate the stars of the house. It always brings me warm memories and that’s why I want to share this simple recipe with you. Enjoy!

Ingredients

  • 1 package of star-shaped pasta (about 2 cups or 7 oz)
  • 1 tablespoon canola or corn oil
  • 1 cup Muir Glen™ tomato purée
  • 1 garlic clove
  • 1/3 cup of chopped cilantro
  • 1/3 onion
  • 1/2 jalapeño, chopped
  • 1 chicken bouillon cube
  • Salt and pepper to taste
  • 2 cups of water
  • 1 cup of grated fresh cheese or cotija cheese
  • 4 teaspoons of microgreens to decorate (you can also use chopped cilantro or Chinese parsley)

Directions

    Add oil to a saucepan and let it heat up, then fry the pasta in the oil until it browns. Discard the oil so that the soup isn’t greasy.

    Add the tomato purée, garlic, onion, jalapeño, cilantro, bouillon cube and a bit of water to the blender. Blend until all the ingredients are well combined.

    Pour the mixture onto the fried pasta and fry for a few minutes. Add the pepper and salt and pepper to taste, also add the rest of the water. Cover and let the pasta cook for a few minutes.

    When it’s ready, serve immediately and sprinkle with fresh or cotija cheese and decorate with microgreens, cilantro or Chinese parsley.
