Spinach-Potato Soup with Meat Croutons

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped white onions
  • 2 cloves garlic, chopped
  • 4 russet potatoes (about 2 lb), peeled and chopped
  • 4 cups Progresso™ chicken broth (32-oz carton)
  • 1 can (12 oz) evaporated milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 boxes (9 oz each) frozen chopped spinach
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil
  • 1 cup diced (1/2 inch) ham

Directions

    In 5-quart Dutch oven, heat oil over medium-high heat. Cook onions in oil 2 to 3 minutes or until translucent, stirring frequently. Stir in garlic. Cook 1 minute. Add potatoes; mix until potatoes are covered with oil. Stir in broth, milk, salt and pepper. Heat to boiling. Cover; reduce heat to medium. Simmer 17 to 22 minutes or until toothpick inserted in potato comes out easily.

    In microwave, cook frozen spinach as directed on box.

    In blender, blend potato mixture and cooked spinach in batches. Place in Dutch oven; stir in lemon juice. Heat until hot.

    In 10-inch skillet, heat oil over medium-high heat. Cook ham in oil 1 to 3 minutes or until slightly crisp. Serve with soup.
