Spinach Cannelloni

Everyone looks forward to Italian night in my home because it means a hearty meal full of flavor and happy faces all around the dinner table. Since pastas are so filling and satisfying, I like to include as many greens to the recipe as I can. In this case, I added lots of spinach to help round out this zesty recipe. If you have any leftovers, this dish reheats in the oven or microwave perfectly and intensifies in flavors the next day. Enjoy!

Ingredients

  • 1 (8-oz) package cannelloni shells

For the tomato sauce:

  • 2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 28-oz can crushed tomatoes
  • 1/2 6-oz can Muir Glen™ organic tomato paste
  • 1 cup water
  • 1/2 teaspoon basil
  • 1/2 teaspoon parsley
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

For the spinach ricotta filling:

  • 1 lb ricotta cheese
  • 1/2 lb mozzarella cheese, shredded
  • 1/4 cup Progresso™ Italian style bread crumbs
  • 1/4 teaspoon salt
  • 1 cup packed, chopped spinach

Garnishes, to taste:

  • Parmesan cheese
  • Fresh basil leaves

Directions

    Preheat oven to 350 °F.
  • 2
    In a large saucepan, heat olive oil. Add onion and garlic and sauté until translucent. Add remaining ingredients and simmer for 30 minutes.

    In a large stockpot, carefully add cannelloni, a few at a time, to 6 quarts of rapidly boiling water. Cook for 8 minutes, stirring occasionally. Do not overcook. Drain and set aside.

    For the spinach ricotta filling: Combine all cheese filling ingredients and mix with spoon until thoroughly combined. Stuff cooked cannelloni with filling. Set aside.

    Pour 2/3 cup of the prepared tomato sauce into the bottom of a 9x13-in baking dish. Arrange stuffed cannelloni in baking dish and top with remaining sauce.

    Bake for 30 minutes. Remove from oven, garnish with Parmesan cheese and fresh basil leaves and serve.
