Spicy Witch Mexican Martini

I experienced my first martini a couple of years back at this wonderful local restaurant, and those martinis left an impression on me! My favorite of all martinis is a dirty martini with extra olives. This recipe is a cross between a dirty martini (called dirty because of the added olive brine) and a Mexican martini – Mexican because it’s prepared with tequila instead of the traditional gin or vermouth. The olives are a fun way to serve them because they look like “witch fingers” floating in your martini!

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 jalapeño sliced in half
  • Juice of 1 orange (about 1/2 cup)
  • Juice of 1 lemon, (about 1/4 cup)
  • Juice of 2 limes, (about 1/3 cup), plus 1 lime sliced into wedges for garnishing rim of glass
  • 6 ozs silver tequila
  • 2 ozs orange liqueur
  • 4 ozs spicy olive brine, more to taste
  • 1/4 cup chile limón powder
  • 12 “witches fingers” spicy olives (olives stuffed with red chiles)
  • Toothpicks
  • 2 cups ice

Directions

    In a saucepan, add 1 cup water, 1 cup sugar and jalapeño. Cook at medium heat, stirring to dissolve sugar. Cook for a few minutes to infuse the flavor of the jalapeño, but do not boil. Remove from heat, transfer to a cool pot or heat resistant bowl and chill for 1 hour. Chill the martini glasses in the freezer while the syrup cools.

    Once simple syrup has cooled, then you can prepare the martinis. In a small pitcher, combine the orange juice, lemon juice, lime juice, tequila, orange liqueur and spicy olive brine. Stir well to combine and taste for spiciness, add more olive brine if you like.

    Take the lime wedge and wet the rim of 4 small martini glasses. Dip into the chile limon powder to rim the glass, set aside.

    In a martini shaker, add 1 cup ice, half of the orange mixture and 2 ounces of chile infused simple syrup. Shake well and fill 2 of the martini glasses. Repeat and fill the remaining 2 glasses. Garnish each martini with 3 witches fingers olives on a toothpick or just floating on top. You can save the extra simple syrup for more martinis.

Expert Tips

    If you are unable to find chile limón powder, you can make your own. Combine 2 tablespoons cayenne pepper, 1 tablespoon sour salt and 1 tablespoon salt. I like making extra to sprinkle on my fresh fruits, like mango, jicama and pineapple.
