This Spicy Black Bean Salad is a perfect summer side dish because you can make it ahead of time, it's easy to transport and is filled with fresh ingredients. It also ramps up the heat for any dish. Serve in a lettuce cup for extra freshness or as a traditional summer side dish to your BBQ's main course.

Ingredients

  • 2 (15 ounce) can black beans, drained
  • 1 (15 ounce) can canned corn with peppers
  • 1 red onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 avocado, chopped
  • 1/2 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 lime, juiced
  • 1 small jalapeno pepper, seeded and minced
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Directions

    In a large bowl, combine black beans, corn, red onion, bell pepper, avocado, cilantro, olive oil, red wine vinegar, lime juice, jalapeno, garlic, salt, and pepper. Stir until well mixed.

    Chill in refrigerator for 1 hour before serving.
