Directions

  • 1 In a large skillet, heat oil over medium heat.
  • 2 Cook chorizo until fully cooked, breaking it apart with spoon as it cooks.
  • 3 Remove from skillet and drain on a paper towel.
  • 4 Return pan to heat, wipe clean and add additional tablespoon of oil. Sauté onion, bell pepper, tomato, and garlic, about 4-6 minutes.
  • 5 Season with salt and pepper, add potatoes and fry until potatoes are golden, lightly crisped and cooked, about 8 minutes.
  • 6 Reduce heat, add chorizo back to the skillet, stir to combine and serve warm garnished with cilantro.
