Smoked Pork Chops with Pineapple Sauce

It's ok to indulge your palate every once in a while. And what better way to celebrate Dad on his special day than with smoked pork chops? Sweet and sour recipes always work for me when it comes to special occasions, and I’m sure the whole family will love the flavor of the tangy pineapple sauce on these chops!

Ingredients

  • 1 tablespoon vegetable oil
  • 4-6 smoked pork chops
  • 2 teaspoons butter
  • 1 garlic clove, finely chopped
  • 1 1/2 cups pineapple juice
  • 2 tablespoons brown sugar (optional)
  • 2 cinnamon sticks
  • 3 sweet cloves
  • 1 can (14 oz) pineapple slices
  • 1 jar (6 oz) cherries

Directions

    Heat the oil in a large pan over medium heat and cook the pork chops on both sides until they've browned.

    Remove the chops from the pan, reduce the heat, and in the same pan add the butter and garlic. Brown carefully, without letting it burn.

    Add the pineapple juice, sugar, cinnamon and cloves. Keep cooking over low heat until the sauce thickens.

    Add the chops, cook for a few more minutes and serve with a slice of pineapple and cherry over each chop. Serve with a generous amount of sauce, mashed potatoes or rice with onions or vegetables.

    Remember, you don't need to season the pork chops because they're smoked and have already been seasoned with salt.

    You can use center cut chops if you like and condiment with only a little bit of salt and pepper so you don't change the taste of the sauce.

    You can also serve the sauce over grilled chicken or salmon.
