If there’s any appliance that solves our time management problems it’s the slow cooker. It’s practical year round because it’s better than turning the oven on in the summer and in the winter I love getting home and smelling warm food in the air that’s just about ready to serve. This slow cooker lasagna recipe is practical and delicious. You can make it your own by adding your family’s favorite vegetables and seasoning. Give it a try!

Ingredients

  • 1 box (12 oz.) oven-ready Lasagna noodles
  • 2 boxes of Progresso™ Artisan creamy tomato with roasted red pepper soup
  • 1 container (24 oz.) ricotta cheese
  • 3 box (9 oz.) chopped spinach, thawed
  • 2 cups shredded mozzarella cheese or quesadilla

Directions

    Apply cooking spray inside your slow cooker.

    Add 1/2 cup of tomato cream, make sure to cover the bottom entirely.

    Place one layer of the lasagna, you’ll have to break some to create a complete layer.

    Add a layer of ricotta, then one layer (1 box) of spinach thawed and dried, 1/2 cup of shredded cheese and then 1/2 cup of tomato cream. Repeat twice more: lasagna, ricotta, spinach, cheese and tomato cream.

    Add the last layers of lasagna, shredded cheese and tomato cream.

    Cover and cook on high for 3 to 6 hours on low in the slow cooker. Turn off and let sit for 1 hour before serving to make sure it absorbs the cream and has the desired consistency.

    Serve sprinkled with parmesan cheese.

Expert Tips

    You can use other vegetables and cheese. The Greek version is made with spinach, olives and feta cheese. You could also try the Mexican version with black beans and roasted Poblano peppers.
