Serve this cucumber and shrimp stuffed avocado, and turn a regular dinner into something really special. You can have this delicious appetizer at a party or meeting, but you can also enjoy it by yourself whenever you want. It’s really easy to make: just marinate the shrimp with cilantro and lemon, mix them with some cucumber, and stuff the avocados with this delicious mix. They’re appealing, elegant and delicious!

Ingredients

  • 3 cups pre-cooked shrimp, peeled and clean
  • Juice of 1 lime
  • Chopped cilantro to taste
  • 1/3 cup chopped cucumber
  • Salt and pepper to taste
  • 1 avocado

Directions

    Mix the shrimp and the lime juice, and then add the chopped cilantro.

    Cover the bowl and put it in the fridge for about 20 minutes.

    Once it has been marinated, remove the liquid and cook the shrimp in a pan for no more than 5 minutes.

    Add the chopped cucumber, making sure you mix it well.

    Cut the avocado in half, remove the seed, take out some of the pulp and add it to the shrimp mix.

    Stuff the avocado halves with the shrimp. Serve immediately.

Expert Tips

  • tip 1
    If you want to make it spicy, add a few drops of Tabasco sauce to the shrimp mix.
