Shrimp Potato Tacos

Anybody who follows my food adventures here at Qué Rica Vida knows that I often talk about my beloved, adopted city of Mexicali, Mexico. Mostly because the food rocks down there! About ten years ago, during the fall, I was there for the big Fiesta Del Sol (Festival of the Sun.) It is basically the biggest carnival I've ever seen in my life. It's a huge party featuring loads of rides, food, drinks and bands. There is so much to see, hear and taste! It was at this wonderful festival where I first tasted shrimp potato tacos. It was love at first bite! I've been making them at home ever since. I constantly switch up on the salsas I put on them to vary them up a bit. If you're looking for a new food-addiction in your life, go ahead and make these!

Ingredients

  • 1 potato, peeled and cut into 1/2-inch cubes
  • Vegetable oil, for frying
  • Salt and pepper to taste
  • 1/2 lb shrimp (peeled and deveined)
  • 4 corn tortillas
  • Hot sauce, to taste

Directions

    In a small pot filled with water to the halfway mark, boil potato for 10 minutes.

    Drain potato and set aside.

    In a large frying pan over a medium high flame, add vegetable oil and allow to get hot.

    Add boiled potato to hot oil. Sprinkle potato with salt and pepper. Cook on each side for 10 minutes or until golden crisp.

    Three minutes before potatoes pieces are fully cooked, add in shrimp and cook until pink.

    Heat tortillas on an open flame. Fill each center with shrimp potato mixture.

    Drizzle with hot sauce. Enjoy!

    Cheddar cheese is a nice addition to this taco.

    Substitute fried crisp potatoes with mashed potatoes.
