Ingredients

  • 2 cups Spring Mix greens
  • 4 orange slices
  • 4 pink grapefruit slices
  • 14 cooked shrimp
  • 2 teaspoons combination of finely chopped chili pepper, green and red bell pepper
  • 1/2 cup simple vinaigrette, made with olive oil, lemon juice, salt, pepper and oregano

Directions

    Make a bed of lettuce in a salad bowl. Arrange, one on top of the other, 2 slices of orange and grapefruit, 1 teaspoon of the pepper mix and 7 shrimp per plate to form a stack.

    Serve with the simple dressing on the side, and drizzle over salad, to taste.

    Try swapping the Spring lettuce mix for fresh spinach or arugula. You may also use balsamic vinegar instead of the simple vinaigrette described above.
