Ingredients

  • 3 cups potatoes, cut in strips (finely sliced)
  • 2 cups red onion, cut in strips (finely sliced)
  • 4 cups curly cabbage (kale), cut in strips (finely sliced)
  • 2 tablespoons lemon juice
  • 2 teaspoons grape seed oil
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon turmeric

Directions

    Cook potatoes over medium heat until potatoes are soft. Strain and let cool.

    Pour the lemon juice on the curly cabbage.

    Heat a teaspoon of grape seed oil in a non-stick saucepan over medium heat. Once is hot, add onion, stirring constantly for 3 minutes.

    Add the potatoes and another teaspoon of oil. Sautee until they are completely cooked.

    Season with salt and black pepper to taste.

    Add the curly cabbage (kale), thyme and turmeric. Cook one minute; stirring constantly.

    Remove from heat and serve immediately.

Expert Tips

    You can change the grape seed oil for another oil of your preference. Keep in mind that some oils are better to use as seasoning when serving, since not all oils cook at the same temperature, each kind of oil burns after reaching different temperatures.

    Once the salad is served, give the dish a touch of color by adding dry cranberries.
