Ham and Cheese Sandwiches with Jalapeño Mayonnaise

One of my fondest childhood memories is watching my mom preparing our school lunches. Usually she made ham and cheese sandwiches and a container of homemade lemonade. Now that I have my own children, I realize the amount of love and dedication my mom put into each and every meal she prepared for my brothers and I. Now I know the importance of a good meal made not only with love, but also with delicious and nutritious ingredients. My kids love their meals with a little bit of spice, so creating mayo with jalapeño was a great idea. They give sandwiches a delicious and unique flavor without being too spicy. In memory of all the sandwiches my lovingly mother prepared, here is the recipe.

Ingredients

  • 2 tablespoons mayonnaise
  • 1 tablespoon Mexican sour cream Mexican
  • 2 pickled jalapeño peppers, cored and finely chopped
  • 1 tablespoon vinegar chili
  • 4 buns or bread of your choice
  • Mustard
  • 8 thin slices of ham of your choice
  • 4 slices of yellow cheese
  • 4 lettuce leaves, washed and drained
  • 1 ripe avocado
  • 1 tomato sliced

Directions

    Combine the mayo, cream, peppers and vinegar in a bowl until you have a consistent cream.

    Cut the rolls in half, spread the mayo on one side and mustard on the other. Add two slices of ham, one of cheese, lettuce, two slices of avocado and one or two slices of tomato. Repeat until you're done with the 4 sandwiches.

    Wrap and pack for lunch.
