Women today have fun roles: workers, mothers, wives, personal assistants, chefs, and teachers… the list goes on! For our families (and ourselves) it’s very important that we find simple and nutritious meals to take to work. Besides helping us diet and saving us money, it also saves us from having to purchase lunch every day. We can also control what we eat since we prepare this delicious simple lunch ourselves. One of the new lunch trends is packing salads in glass jars. This salad can be prepared all week and won’t go bad now that you know my big secret!

Ingredients

For the green salad:

  • 3 tablespoons of chopped celery
  • 3 tablespoons of shredded jicama
  • 3 tablespoons of chopped red onion
  • 15 cherry tomatoes
  • 3 cups of fresh lettuce with spinach and arugula (you can buy it ready in packages)

For the savory dressing:

  • 1/2 cup of olive oil
  • 1/3 cup of vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground black pepper

For a sweet salad:

  • 2 tablespoons of pomegranate
  • 2 tablespoons of shredded raw beets
  • 10 orange wedges
  • 2 tablespoons chopped red onion
  • 2 cup of fresh lettuce with spinach and arugula

For sweet dressing:

  • 1/2 cup of olive oil infused with orange zest
  • 1/3 cup of pomegranate vinegar
  • 1 teaspoon of honey
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground black pepper

Directions

    Wash the glass jars thoroughly.

    Cut all the vegetables with the help of a food processor. Set aside.

    Start preparing the savory vinaigrette for the green salad. Mix all of the ingredients for the dressing in a bowl and add 1 1/2 tablespoons of vinaigrette to the bottom of the jar.

    Add a tablespoon of chopped celery, a tablespoon of jicama, a tablespoon of red onion, 5 tomato cherries and 1 cup of lettuce. Do this again for 2 more jars. The amount of green salad should be enough for 3 jars.

    For the sweet salad with oranges, prepare the dressing by combining all the ingredients on the list. Add 1 1/2 tablespoons of pomegranate vinaigrette to the jar. Add a tablespoon of pomegranate, one of beets, 10 orange wedges, tablespoon of red onion and finally, add the lettuce.

    To eat, just shake the jar to spread the dressing and enjoy!

Expert Tips

  • tip 1
    The trick to making to sure the salad doesn’t go bad is to make sure the lettuce never touches the dressing and that we first add the solid ingredient and keep the dressing at the bottom of the jar.

    The jars should always be kept refrigerated.
  • tip 3
    I recommend purchasing vacuum-sealed glass containers to keep everything fresh.
