You can also use a thinner pasta, such as vermicelli or angel hair pasta.

Directions

  • 1 In 2-quart saucepan, melt butter over medium-high heat. Add shallot; cook 1 to 2 minutes or until translucent. Stir in garlic; cook 30 to 60 seconds.
  • 2 Add wine. Stir in cream, both cheeses, nutmeg, salt and pepper. Heat sauce to a simmer (do not boil). Reduce heat to medium; simmer 15 to 20 minutes, stirring occasionally, until sauce reduces to three-fourths original amount.
  • 3 While sauce is simmering, cook and drain fettuccine as directed on box.
  • 4 Serve sauce over pasta. If desired, top with additional Parmesan and blue cheese.
