Ropa Vieja Waffles

Ropa vieja has been one of the most popular Cuban and Puerto Rican dishes for the last few years. However, there are other Latin American countries with different versions. For example, you could find a similar dish in Mexico called carne deshebrada. Ropa vieja means old clothes and the dish looks like shredded fabric. But don’t let its appearance stop you. The combination of tomato, vegetables and olives provides a unique flavor. Traditionally it is served with rice, but in this occasion we’re going to give it a little twist to combine it with another popular dish: waffles. The waffles are cooked with bell pepper and olives. They’re delicious alone and combined with ropa vieja they create an interesting and unique dish.

Ingredients

For the ropa vieja:

  • 2 tablespoons of oil
  • 1 1/2 pounds of flank or skirt steak
  • 2 bay leaves
  • 1 thick strip of bacon, chopped
  • 1 medium onion, filleted
  • 3 garlic, finely chopped
  • 1 green pepper, cut into slices
  • 1 can (28 ozs) of Muir Glen™ organic fire roasted crushed tomatoes
  • 30 olives, sliced
  • 6 tablespoons of capers, strained
  • 1 cup beef broth
  • 1/2 teaspoon of dry thyme
  • 1/4 teaspoon of cumin
  • Salt and pepper to taste

For the waffles:

  • 2 cups Original Bisquick™
  • 1 egg
  • 1 1/3 cups milk
  • 2 tablespoons vegetable oil
  • 6 olives, finely chopped
  • 1/2 jar roasted red pepper, finely chopped

Directions

    Heat the oil in a pot and place the meat seasoned with salt and pepper. Seal in the juices, approximately 30 seconds on each side.

    Add 2 bay leaves, water and cook until tender and can be shredded effortlessly. I used my pressure cooker and the meat was ready in 20 minutes, but you can pick your method. Remember to save 1 cup of the broth. Shred the meat and set aside.

    Fry the bacon in small pieces in a pot and then add the onions and garlic. Constantly stir for a few minutes to let the onion soften. Add the pepper and let everything combine for 5 more minutes.

    Add the tomatoes, olives, capers, broth, thyme and cumin. When it begins to boil lower the temperature so that it boils softly. Cover and let cook for 20 minutes.

    In the meantime, prepare the waffles.

    Blend the Bisquick™ mix with the egg, milk and vegetable oil until everything is well combined and you can’t see any lumps. Add the olives and red pepper.

    Heat the waffle maker and cook the waffles.

    Check the meat and taste the salt, add more if necessary.

    Serve with the waffles.

    If you can prepare the meat the day before you plan on serving, the taste will be much better.

    Ropa vieja can be kept frozen. If you have any left over, freeze for a meal at a later time.
