Salt and pepper to taste

For the Salad:

cup of olive oil

teaspoon of brown sugar
Salt and pepper to taste

romaine lettuce

cup of sliced almonds

cup of dried cranberries

Directions

  • 1 For the salmon: Preheat the grill or griddle to medium heat. Season the salmon with the lemon pepper, garlic powder, and salt/pepper.
  • 2 Lightly sprinkle the grill with canola oil spray or butter. Place the salmon on the grill and cook for 6-8 minutes on each side or until the fish falls apart easily with a fork.
  • 3 For the salad: In the meantime, mix or blend the ingredients to make the dressing: olive oil, balsamic vinegar, Dijon mustard, brown sugar, salt and pepper.
  • 4 Wash and drain the lettuce well. Cut and add the almonds and cranberries. Serve on separate dishes and add dressing to taste. Serve with salmon.
