Roasted Red Pepper and Goat Cheese Quinoa Salad

Quinoa is a wonderful base for a side dish because you can customize it with an array of different ingredients. These can be sweet, like fruit and honey, or savory, like roasted vegetables and flavorful cheeses. Not only does this grain make a wonderful side dish, but is also ideal for breakfast and a tasty snack. This quinoa salad came to be when I had a lone red bell pepper in my refrigerator. I decided to roast it and incorporate it in a grain salad. Make sure the pepper gets a bit charred during the preparation process because the char is what gives this salad its distinct taste.

Ingredients

  • 1 tablespoon olive oil
  • 1/3 onion, finely chopped
  • 1 garlic clove, minced
  • 1 large red bell pepper, roasted and chopped in small pieces
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 2 teaspoons basil, chopped
  • Salt and pepper to taste
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Directions

    In a large pan, heat oil over low-medium heat.

    Add the onion and garlic and sauté until tender, approximately 3-5 minutes.

    Add the roasted bell pepper, quinoa, vegetable broth, basil, salt and pepper, and bring to a boil.

    Cover, reduce heat to low and cook for 12 to 15 minutes until quinoa has absorbed all the liquid.

    Remove from heat and toss in the goat cheese and balsamic vinaigrette.
