Ingredients

  • 2 Poblano peppers, large
  • 2 tablespoons olive oil
  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 4 burger buns
  • 2 tablespoons mayonnaise
  • 4 small lettuce leaves
  • 1 small tomato, sliced
  • 1 small Vidalia onion, sliced
  • 4 slices white cheddar

Directions

  • 1
Coat Poblano peppers with 1 tablespoon olive oil and place them on a baking sheet under the broiler.
  • 2
Broil each side of the Poblanos, turning every 5 minutes or so as each side gets char.
  • 3
Once the peppers are roasted, place them in a bowl and cover with plastic wrap allowing the steam to wilt them so you can easily remove their skin.
  • 4
After a few minutes, remove the skin and seed of the peppers and roughly chop their meat, setting it aside.
  • 5
Combine the chopped roasted peppers with the ground beef and season with salt and black pepper.
  • 6
Divide mixture into 4 equal portions and form patties of 3/4 inch thick.
  • 7
Place patties in a hot skillet or grill with 1 tablespoon of olive oil to cook.
  • 8
Cook for about 6 minutes each side or until desired doneness.
  • 9
Build your burger as desired, we suggest to place the burger patties in between two buns and include a layer of mayonnaise, lettuce, tomato, onion and white cheddar.

Expert Tips

  • tip 1
