Ingredients

  • 4 Arctic Char fillets (5-6 ozs each)
  • Salt and pepper, to taste
  • Oregano, to taste
  • Cooking spray
  • 1 cup kale, chopped
  • 1 tablespoon unsalted butter, at room temperature
  • 1/4 cup heavy whipping cream
  • Juice of 1/2 lime

Directions

    Heat oven to 350 °F. Rinse, pat dry fish fillets and season with salt, pepper, and oregano, to taste.

    Place on a baking sheet coated with cooking spray and roast for 20 minutes or until fish is fully cooked and easily flakes.

    While fish is roasting, place kale in microwave-safe bowl, cover, and cook for 2 minutes on high.

    Place cooked kale, butter, heavy cream, and lemon juice in blender or food processor. Blend until smooth. Season with salt and pepper. Serve over fish.
