Directions

  • 1 Heat oven to 350 ºF. Rinse, pat dry fish fillets and season with salt, pepper, and oregano, to taste.
  • 2 Place on a baking sheet coated with cooking spray and roast for 20 minutes or until fish is fully cooked and easily flakes.
  • 3 While fish is roasting, place kale in microwave-safe bowl, cover, and cook for 2 minutes on high.
  • 4 Place cooked kale, butter, heavy cream, and lemon juice in blender or food processor. Blend until smooth. Season with salt and pepper. Serve over fish.
