Ever since I was a child I have enjoyed combing sweet and savory flavors. That’s why I have added pumpkin to this dish. You will love every bite. I like to use pumpkin in different dishes. Whether roasted, in soups, creams, or accompanying pasta, it is sure to please. Pumpkin is also a great food to include in a healthy diet for your family, as its properties (such as fiber, vitamins and several minerals) are more interesting than those of the potato. This delicious pasta dish will be a hit in your family.

Ingredients

  • 1 package rigatoni pasta
  • 14 oz of smoked pork sausage (Polish style)
  • 2 lbs butternut pumpkin
  • 2 tablespoons olive oil
  • 1 medium red onion, chopped
  • 1 medium white onion, chopped
  • 1 tablespoon minced garlic
  • 1/4 teaspoon curry powder
  • 1 plum tomato, diced
  • 2 cups vegetable broth
  • Parmesan cheese, optional
  • Two tablespoons of fresh Italian cilantro or parsley, chopped, for garnish

Directions

    Preheat the oven to 350° F. Cut the pumpkin in half, remove the seeds and scrape the inside with a spoon. Then dice it. Put it on a baking sheet and sprinkle the top of the pumpkin with olive oil and curry powder. Place in oven for 20 minutes or until tender. Add salt if desired.

    Meanwhile, in a skillet over medium high heat brown the onions and garlic, add the tomato, the sausage and the vegetable broth, and cook for 10 to 15 minutes.

    Follow the instructions on the back of the package to cook the pasta, drain it and keep it warm in pot.

    When the pumpkin is ready, stir in to the sauce and pour over pasta. Garnish with cilantro or parsley leaves.

    You can use 8 slices of bacon instead of sausage. Place the bacon in a skillet until golden brown.

    You can also use chicken broth instead of vegetable broth.
