Expert Tips

You can use 8 slices of bacon instead of sausage. Place the bacon in a skillet until golden brown.

If you are looking for a meal that will delight your senses with its combination of flavors, aromas and textures, you have found it here. Ever since I was a child I have enjoyed combing sweet and savory flavors. That’s why I have added pumpkin to this dish. You will love every bite. I like to use pumpkin in different dishes. Whether roasted, in soups, creams, or accompanying pasta, it is sure to please. Pumpkin is also a great food to include in a healthy diet for your family, as its properties (such as fiber, vitamins and several minerals) are more interesting than those of the potato. This delicious pasta dish will be a hit in your family.

You can also use chicken broth instead of vegetable broth.

Directions

  • 1 Preheat the oven to 350° F. Cut the pumpkin in half, remove the seeds and scrape the inside with a spoon. Then dice it. Put it on a baking sheet and sprinkle the top of the pumpkin with olive oil and curry powder. Place in oven for 20 minutes or until tender. Add salt if desired.
  • 2 Meanwhile, in a skillet over medium high heat brown the onions and garlic, add the tomato, the sausage and the vegetable broth, and cook for 10 to 15 minutes.
  • 3 Follow the instructions on the back of the package to cook the pasta, drain it and keep it warm in pot.
  • 4 When the pumpkin is ready, stir in to the sauce and pour over pasta. Garnish with cilantro or parsley leaves.
